½ cup imli or Tamarind
1 cup water
1 tsp red chilli powder
1 tsp cumin powder
½ tsp turmeric
1 tsp ginger powder
3-4 dates finely chopped
½ cup Jaggery or palm sugar
Salt to taste
Method
Soak the tamarind in water for an hour or minimum of 30 minutes.
Drain the tamarind water in a sauce pan and make sure you get most of the tamarind pulp. Make sure to get rid of the seeds.
Bring to a boil and then add rest of the ingredients and let it simmer for 10 minutes till reduced to ¾ cup.
Let it cool and use as condiment with samosa or your favourite chat.
This can be stored in airtight container for upto a month.
