½ Cauliflower chopped roughly
1 medium potato peeled and diced
2 carrots peeled and cubed (larger than your usual cut)
1 capsicum chopped in chunks
1 tsp cumin whole
1 tsp cumin powder
½ tsp turmeric
1 tsp garam masala
1 tsp ginger julienne
2 green chillies chopped
3 stems coriander chopped
Salt to taste
½ tsp red chilli flakes
2 tbsp oil
Method
In a wok add the oil and heat on medium. Add the cumin seeds and allow them to splutter. Then add the potatoes salt and turmeric. Add a little water and allow the potato to cook for 3 minutes, then add the cauliflower and let it cook for further 5 minutes.
Then add carrots and capsicum, cook for 2 minutes. Then add the ginger, green chilli, cumin powder, red chilli flakes and mix well.
Let it cook till all the veg’s are cooked well but firm to keep their shape. Remove from heat and add the garam masala and coriander and serve with roti.
