4 medium (sized) Potatoes, boiled and mashed
4 medium (in size)Tomatoes, chopped
2 medium Onions chopped
1 Green capsicum chopped deseeded
¼ small cauliflower, finely chopped
¼ cup green peas
1 inch ginger
8-10 cloves of garlic
3-4 chopped green chillies
1 ½ Pav Bhaji Masala (Everest or Badshah available in Indian Grocery Store)
Salt to taste
3 tbsp butter
8 burger buns
¼ cup chopped coriander leaves
2 lemons cut into wedges
Method:
- Boil green peas in salted water till soft, or if using frozen just microwave them till defrosted and soft.
- Grind ginger & garlic to a fine paste.
- Heat oil in a pan and add ¾ qty of the onions. Saute till light brown.
- Add green chillie and ginger-garlic paste. Stir fry for half a minute.
- Add ½ qty of the tomatoes and cook on medium heat for 3-4 minutes, stirring continuously or till oil separate from masala.
- Add capsicum, peas, cauliflower, potatoes and ½ cup of water.
- Bring it to a boil and simmer for 10 mins, pressing with back of the spoon a few times, till all the vegetables are completely mashed.
- Add pav bhaji masala, salt and remaning tomatoes.
- Cook on medium heat for 2 mins, stirring continuously.
- Heat half of the butter in a thick-bottomed pan or a tawa. Slice buns horizontally in 2 and pan fry in butter till golden on both sides pressing it down to flatten a little.
- Garnish bhaji (vege) with chopped coriander leaves, remaining butter and serve hot with buns, accompanied with remaining chopped onions and lemon wedges.
I buy the hamburger buns as they are a already sliced.
I also add some butter with the vegetable oil at the begining so it gives a buttery taste from the start.
