500g lamb mince
1 onion diced
2 cloves of garlic crushed
1 tsp gram masala
½ tsp chilli powder
1 tsp ground tumeric
½ tsp gorund roasted cumin seeds
1 fresh green chilli finely diced
1 tsp chopped mint & corriander
½ tspn fresh grated ginger
salt & pepper to taste
juice of half a lemon
Pastry
I use the spring roll pastry cut in strips.
Heat the oil in a frying pan, add the onion and garlic mix in the spices and seasoning and fry until soft. Add the mince, stirring until cooked. Remove from heat and stir in the mint and lemon juice.
Method to fold the samosa into the pastry:
Take 2 strips of pastry and join at one end to make a long strip.
Take 1 tsp of the filling put on the pastry and fold taking one corner of the pastry to a right angle and keep folding until you have folded a tight samosa.
Tips:
Make sure your filling is dry.
