Ingredients
8 cups of vegetable stock
1/4 tsp coriander powder
1/4 tsp nutmeg freshly grated
3 whole peppercorns
2 cloves
1 inch cinnamon stick
1 bay leaf
1/4 cup thyme
1 tsp olive oil
500 gms chicken breast -skinless boneless-chopped in cubes
300 gms leek washed thoroughly and cut into strips
2 celery sticks chopped
1 shallot chopped
250 gms mushrooms sliced
salt & pepper to taste
Method
In a large pot add thestock, spices and herbs. Bring to a boil and then let it simmer for about 15-20 minutes. Sieve through to remove all the whole spices and thyme.
In a pan heat oil, saute onions, leek, chicken,mushroom celery. Add salt and pepper.
Add the stock and allow to simmer for a further 20 minutes.
Serve hot on its own or with some bread on the side.
