Vaghareli Khichdi

Ingredients
1 cup Khichdi
1/4 cup peanuts
1 green chilli finely chopped
1 tsp coriander leaves chopped
1 tsp dry garlic flakes crushed
2 tbsp oil
(1/2 tsp cumin seeds are optional)
1 medium sized potato finely chopped
1 medium red onion finely chopped
Salt to taste
1/2 tsp Turmeric
Method:
In a wok heat oil and add peanuts, roast the peanuts inoil till nicely browned from all sides.
Remove peanuts and set aside.
In the same oil add cumin seeds if you will add and let them splutter. (I didn't add in mine)
Then add the green chilli & onions, allow the onions to get translucent. Then add garlic flakes, salt, turmeric and potatoes. Cook with some water till potatoes are cooked.
Then break you Khichdi and mix well. Allow the khichdi to warm all the way through.
Serve and garnish with the peanuts and coriander.
